Saillard worked as a chef in Brooklyn & NYC for many years before throwing it all away to become a dazzlingly talented winemaker in the Loire Valley; that classic cheffy meticulousness is all over his wines. Obsessive observation & constant care are his highest priorities in the vineyard, where everything is done by hand & without the use of chemical sprays. These wines are fine, precise and utterly delicious. The type of natural wine that will age beautifully - if you are more patient than us! - or be the exclamation point for a special meal or occasion. We can't wait to get these in your glass.
